We Vassalli are bakers, the holders of break-making secrets perfected in unique recipes for taste, smell and authenticity.

No “additives” and no GMOs are included in the ingredients used for preparing our bread, which are all rigorously of Italian origin, from the durum wheat flour from Ferrara, known as one of the best in Italy, the sourdough starter, the strictly extra virgin olive oil to the refined lard that makes our excellent “coppie” so crumbly.

We have developed the technique with technology in order to produce more, but with the same quality guaranteed by the hand-made process. 1,200 kg of raw bread are frozen at -18°C straight after being formed.

Hence, the special characteristics ofVassalli bread are kept intact so all that remains for you to think about is the simple rising and cooking process.
